The SAKE Scale
There are four basic grades of Sake scaled according to their polishing rates. The polishing rate is the grading of rice to specific percentage. The more it is polished the purer the Sake is. Daiginjo more than 50% up to 65% Ginjo More than 40% Junmai more than 30% up to 35% The term Junmai issued to indicate that a Sake has not additional distilled alcochol as a polishing rate. Therefore, it can be graded as Junmai Daiginjo.
